Restaurateurs
As with the first edition of Successful Restaurant Design, this new edition offers insights into the design process and helpful hints about design that could be useful whether you are building a new restaurant, renovating an existing operation, or adding a another unit to an existing concept. You probably learned a great deal about design during your first opening and Successful Restaurant Design should help make your next project less stressful and more rewarding.

The first five chapters of Successful Restaurant Design cover the basics of design. Of particular importance to restaurateurs  is the section that deals with the roles and responsibilities of the design team. Our chapter on the Psychology of Design discusses the psychological impact of design on your customers. Other topics in the first five chapters range from tabletop design to ventilation systems to the design of an optimal workstation. Chapter 7, Speak out on Design, should be particularly useful for any restaurateur who is looking at a potential design project. In this chapter, leading designer/architects, and operator/owners reveal insights on design that could help you save time and money on your next project.

Other helpful sections of this Web site include a constantly expanding group of links to related Web sites such as architects/designers, associations, restaurant companies, and other references. There is also supplemental images and information that relate to several of the mini-cases that appear in chapter 6 of Successful Restaurant Design.

In chapter 8, Design for the New Decade, we discuss some of the important trends that will shape the restaurant industry over the next ten years and how well-executed designs can be used to maximize profits and minimize problems.

Designers
Keeping abreast of the latest design trends is an important way to maintain your competitive edge. We feel that Successful Restaurant Design offers insights that go beyond what you can find in most magazines and well beyond what you can find in any coffee table book. Successful Restaurant Design is the only restaurant design book that has been published in a second edition.  It is a particularly important reference for those of you who are just beginning your career in restaurant design or for those who would like to add restaurant design to an established portfolio of offerings in other types of residential or commercial design. In any case, it's important for designers to understand the design issues faced in the back of the house, as well as in the front of the house. Successful Restaurant Design addresses issues that are of direct concern to designers,  operators, and other members of the design team.

Architects
It's important for restaurant architects to understand the current trends in both back and front of the house design for restaurants. Magazine articles offer one means of understanding current restaurant design and architectural trends but they can't get into the details that contribute greatly to success. With an increasing number or firms offering architectural and design services, architects can benefit from a clear understanding of both front and back of the house design issues. Successful Restaurant Design is particularly valuable for architects who will design buildings that incorporate restaurant or other foodservice spaces. Throughout the book references are made to issues like code compliance, traffic flow patterns, lighting, and acoustics which are important issues for any architect involved with a restaurant project.

In chapter 7 the interviews with leading design/architects and owner/operators give intimate insights into the role they see for design in restaurants today and in the future. Chapters 4 and 5 offer important insights into both back and front of the house design issues that are important for architects to consider. And the chapter on the Psychology of Design provides an important look into how restaurant spaces impact customers.

Students
Yup, it's a textbook. But it's unlike most of the texts that you've read in the past. For one thing we've included over 200 images that help to support our text content. The pictures are not there just to look at and skip over. Each image tells an important story by itself so check them out closely as you read through the words.

What we really want you to learn from Successful Restaurant Design is an understanding of the design process. By the time you're done with this book you'll understand what design features contribute to a successful restaurant design and what features detract from a restaurant's success. You'll know how you can use design to heighten the sensual experience in a restaurant. You'll read interviews from leading designer, architects and restaurateurs as they speak out on design. And you'll get some insights into the trends that will shape the restaurant industry and their designs over the next 10 years.

If you're a design or architecture student you will benefit from understanding the issues that are important to those folks who will become your clients. And if you're enrolled in a hotel, restaurant or culinary curriculum you'll discover what makes designers and architects tick. And you'll get some important insights into what constitutes a good restaurant design.

Most important, we've built the Learning Resource section of this Web site to make this book an interactive experience for you. You'll find loads of hyperlinks to useful resources that can help you with class projects. And your faculty will find our downloadable PowerPoint presentations a great way to liven up their lectures. Most important you'll discover ways where you can submit your own mini-cases for possible inclusion in the Learning Resources.

The authors of Successful Restaurant Design have been teaching and writing about restaurant design for over 25 years. The second edition of Successful Restaurant Design builds on the success of the first edition that was first published in 1989. This is the only textbook that covers issues related to both front and back of the house design in restaurants. Unlike the coffee table books with lavish color photography, Successful Restaurant Design is a text-based book that integrated images in support of the text.

The authors have made available a set of PowerPoint presentation for use in your classes. The presentations are available in a protected area of this Web site. Permission to access and download the presentations can be obtained by contacting the authors via email at jfdurocher@comcast.net .
